To ensure a truly exquisite dining experience, Kösebasi uses original recipes and food that is freshly prepared at the premises. The first menu for the restaurant was set six years ago and the team has since played an instrumental role in maintaining the high standards of quality, authenticity and taste that Kösebasi is known for. The dishes boast influences from the Balkans, the Mediterranean and what remains of the Ottoman culinary heritage of Turkey. “After a while, we all want some change and we thought it was about time some new dishes were added to the menu,” says the Kösebasi team. “We were in Turkey for five days, visiting restaurants in various parts of the country, trying out new dishes, and in the end narrowed down on these ones.” The revamped menu still contains some of the old favourites, but the new dishes are indeed a must-try. The additions include hellimlli salata, a salad of lettuce and rocket leaves served with cherry tomatoes; halloumi cheese with mayo orange dressing; and sasliki salata which features Mediterranean greens with saslik beef slices. New dishes Sucuklu kasarli pide is a flat, pizza-like dish that has mozzarella and Turkish sojouk.. Another interesting addition to the starters menu is a dip, quite suitably called Sultan for its rich texture and taste. This creamy labneh is made with beetroot and herbs. For the main course, there is külbasti, which consists of beef fillets cooked to perfection and served with bulgur pilavi. The meat is treated and stored in a chiller for 10 days to achieve the right level of tenderness. It is then mixed with a special spice mixture, marinated for two more days and then cooked. Another sensational dish on the new menu is the pistachio kebap, which is meat minced with a generous portion of pistachio nuts and mozzarella cheese. The dishes are surprisingly light on your stomach despite their decadent ingredients. The trick lies in complete in-house preparation, which keeps the food free of preservatives, saturated fats and harmful salts. All sauces are made from scratch.
