He, along with newly appointed chef de cuisine Gianmaria le Mura, begins the New Year with a number of fresh additions to the menu that further demonstrate the kitchen team’s relentless passion to push the boundaries of fine Italian cuisine. He says: “The main focus of the new menu is to offer the authentic flavours of Italian food. To uncover traditional tastes, we have to go back to our roots.” At Oliveto, Giuseppe has tried to preserve the originality of the dishes and says the new menu — released this month — features a number of surprises. Expect to see a fresh selection of appetisers, homemade pasta and main course dishes, with seasonal produce and ingredients. Some of the dishes to look forward to include poached veal with crispy capers, tuna sauce and fresh basil, which will be served hot, and the handmade gnocchi with saffron and seafood. Meanwhile, the restaurant will also host a week-long, Tuscany festival, dedicated to the picturesque landscape of the region and the agrarian style cooking that bursts with fresh flavours.
